Having formally trained in Scotland and Berkshire, Mladen began his professional career in Aberdeen before first moving to London in 95 to join Conran's Richoux Restaurant.
Following his time at Richoux, Mladen spent the next year at Mezzo under the tutelage of Chris Galvin. From there he was invited to join Chris and Jeff at Orrery in 1998, with the restaurant achieving a Michelin star within it's first year.
After his tenure with the Galvins, Mladen started with Garry Hollihead; initially at Mortons as Chef de Partie, Junior Sous at Marco Pierre White's Sugar Reef and Red Cube, before taking the position of Sous Chef at Embassy London in 2001. By 2006 he had progressed to Head Chef of the acclaimed Embassy London and in 2008 accepted the challenge to move to the new Embassy Abu Dhabi - set within the 7* deemed Emirates Palace Hotel.
After almost 10 years working with Garry, Mladen returned to London as Head Chef of Marco's Wheelers Restaurant, St James.
In November 2009, Mladen was appointed Head Chef of the award winning Bella Luce Hotel in Guernsey, catching the eye of the Michelin Guide amongst others in his time there.
In April 2012 Mladen joined Zak Jones as Executive Chef at The Chancery.
And so the new chapter begins.
